Spicy Butternut Polenta

5 cups water
1.5 cups of medium grind polenta
1 tbsp olive oil
1 tsp salt
1 cup butternut puree
1 tbsp maple syrup (optional)
1-2 tsp pumpkin pie spice
sprinkle cayenne
1/2 cup grated parmesan (optional)

Add water and salt to saucepan and bring to boil. Lower heat, add olive oil and slowly whisk in polenta. Keep stirring as polenta can clump. Let cook stirring frequently for about 20 minutes until soft. Take off heat. Stir in butternut squash puree and pumpkin pie spice. Mix in cheese if using. Serve in bowls topped with a sprinkle of cayenne to taste.
